Cauliflower Fritters

I was inspired to come up with this recipe after seeing several different fritter recipes on another blog recently. If you hate cauliflower you might not like these, but if you can at least tolerate it I think you'll love them - I do. They are very low calorie and so good!

Ingredients:
3 1/2 cups cooked cauliflower
1/4 cup finely chopped onion
1 clove garlic, minced
Pepper, to taste
1 egg
1/4 cup skim milk
1 cup shredded swiss cheese
1/4 to 1/2 cup fine bread crumbs

Mash the cauliflower (but should still be slightly lumpy).

Stir in the onion and garlic and season with pepper. Then stir in the egg and add the milk.

Once that is all combined stir in the swiss cheese. Add bread crumbs just until the mixture holds together enough to make balls that don't fall apart.

Spray a cookie sheet with cooking spray. Then form the cauliflower mixture into approx. 1 inch balls and place on the cookie sheet. Spray again with cooking spray.

Broil 5-10 minutes until they start to get crispy and golden on top. Then enjoy!

Calories per fritter: about 15 (the cauliflower is not counted in these calories)
