Veggie Pizza

When I made this "Greek Pizza" it was the first time I tried a pizza without sauce. And I loved it. So I thought I'd try it again same thing with this pizza. It's yummy (sorry about the picture though - it tastes better than it looks)! Hope you enjoy.

Ingredients:
2-7 inch thin pizza crusts
1 cup cauliflower florets
Olive oil cooking spray
2 tablespoons finely chopped yellow onion, plus 1 slice chopped in half and rings separated
1 clove garlic
1/4 c. plus 2 tablespoons mozzarella cheese
2 tbsp. feta cheese
Handful or more of baby spinach, stems removed
1 cup sliced mushrooms
10 or so quartered grape tomatoes

Cook cauliflower just a couple of minutes till it is slightly tender but still has some firmness. When they are done, season as desired. I like to use a pinch of salt and cilantro. Chop into small pieces.

Meanwhile saute the chopped onion and garlic in a saute pan (sprayed with the olive oil spray) over medium heat until tender.

Spray each pizza with the olive oil spray and divide the sauteed garlic and onions evenly over each, spreading to cover. Layer on enough spinach to loosely cover each pizza (or if you want the spinach thicker feel free to use more).

Sprinkle 3 tablespoons of the mozzarella and 1 tablespoon of feta over each pizza. Then divide the cauliflower evenly over the cheese.

Top each pizza with the mushrooms, sliced onions and tomatoes in whatever order you desire.

Bake at 450 for 10 or so minutes till the cheese is melted and crust is as crispy as you desire.
