Cauliflower and Cheese Casserole

I came up with this yummy cauliflower dish a couple weeks ago when I was trying to think of how to make a lower calorie macaroni and cheese dish.

3 cups cooked cauliflower
3 tablespoons butter
2 tablespoons flour
1/2 teaspoon salt
dash pepper
2 cups skim milk
6 oz. low-fat Mexican cheese blend
2 oz. Swiss cheese

Serves 6-8 (Makes 8- 2/3 cup servings)

In a saucepan melt the butter; blend in the flour salt and pepper. Add the milk and cook and stir constantly until thick and bubbly (takes 7-8 minutes usually). Add the cheeses and stir till melted.

Mix the cheese sauce with the cauliflower. Put mixture into a 1 1/2 quart dish and top with the panko.

Bake at 350 for 30 to 45 minutes or till heated through.

Calories per serving = about 163 for 1/8 or 230 for 1/6 of the whole dish
