I came up with this yummy cauliflower dish a couple weeks ago when I was trying to think of how to make a lower calorie macaroni and cheese dish.
3 cups cooked cauliflower
3 tablespoons butter
2 tablespoons flour
1/2 teaspoon salt
2 cups skim milk
6 oz. low-fat Mexican cheese blend
2 oz. Swiss cheese
Serves 6-8 (Makes 8- 2/3 cup servings)
In a saucepan melt the butter; blend in the flour salt and pepper. Add the milk and cook and stir constantly until thick and bubbly (takes 7-8 minutes usually). Add the cheeses and stir till melted.
Mix the cheese sauce with the cauliflower. Put mixture into a 1 1/2 quart dish and top with the panko.
Bake at 350 for 30 to 45 minutes or till heated through.
Calories per serving = about 163 for 1/8 or 230 for 1/6 of the whole dish

My awesome Dad was an astronomy major in college and has always loved all things "outerspacey" (my word, not his) and science fiction. So my brothers and sister in law and I made him a SCI FI magazine all about him for Father's Day this year. This is a few of the pages I did for it. It was so much fun to make, I think he'll really enjoy it.
