BBQ Chicken Appetizer Pizza with Shallots and Jarlsberg Cheese

Delicious combination.  I used Trader Joe's Carolina Gold BBQ Sauce, so yummy, and went well with it if you want to try it.

Yields about 10 appetizer sized pieces


1 loaf frozen bread dough, thawed
1 boneless, skinless chicken breast, cut into bite sized pieces
Olive Oil
Salt and Pepper
Krazy Salt
2 Shallots, peeled and sliced
BBQ sauce, amount to taste
Jarlsberg Cheese, grated, amount to taste
Cheddar Cheese, grated, amount to taste


Press dough out into a 10x6 rectangle shape and let rest.

Heat Olive Oil in a medium sized pan over medium-high heat and add the chicken.  Season to taste with the salt pepper and Krazy salt and saute 5-10 minutes until chicken is cooked through and nicely brown.

Remove the chicken from the pan and set aside.  Add more olive oil and saute the shallots in the same time, just a few minutes till tender.

Spread BBQ sauce over the resting dough, leaving as much crust as you would like, I'd say at least 1/2 an inch. Top with chicken and shallots.  Then sprinkle the Jarlsberg & Cheddar cheeses on top and drizzle over a little more BBQ sauce.

Bake at 400 for 20-25 min or until the crust is nicely browned. Let cool slightly and then cut in half lengthwise and then 5 times up and down to make 10 pieces.

Its delicious warm or cold.
